AN EGG BAKE
Food for events. I dig building menus. Mostly because I find it challenging. I continually complicate things, but my mom is great about reminding me to keep it simple.
Menus for bridal showers are always interesting to me. People want substance (bc champagne), but don't tend to eat a ton. In our experience (which is getting up there at this point), cheese boards work great. Also, eggs! Substantive. Add a few hearty salads and you're set. Easy.
Ok. Guys. Ramekins. They are my favorite for parties. They are easy to serve plus are the most adorable. Even as a minimalist, I say buy some! You can make so many things in them. Think mac and cheese. Or molten cakes. For this bridal shower, we did an egg bake. I'm pretty sure (but not totally) that this classifies as a souffle... but that's a little fancy for me. This recipe was built around Grandma Carlsen's 'Sausage Egg Bake' recipe, one that she makes every Christmas morning. The Carlsen's are wonderful, forever family-friends. Mama Carlsen and my mom are the ultimate party planners!
Ingridients
6 eggs, beaten
1 1/2 cups milk
1/2 cup greek yogurt
1 1/2 teaspoon salt
1 tablespoon dry mustard
2 cups chopped mushrooms
1 table spoon of butter
5 slices thick bread, cubed
1 cup grated cheddar cheese
1 cup parmesan cheese
Directions
Preheat oven to 350 degree.
Chop mushrooms. Add them and the tablespoon of butter to a pan over medium heat. Sautee until cooked through. Take off heat and set aside.
Mix eggs, milk, greet yogurt, salt, mushrooms, bread cheddar cheese in a large bowl.
Grease baking dish or ramekins. Place ramekins on a baking sheet.
For baking dish: bake for 40 minutes. Top with parmesan while hot.
For ramekins: bake for 20 minutes. Top with parmesan while hot.
Let sit for at least 5 minutes before serving.
